Cheesecake Easter Eggs with Baileys Caramel

This delicious Cheesecake Easter Egg recipe uses a large hollow chocolate egg and a handful of solid mini chocolate eggs. Its a great way to use up some of the extra eggs you’ve had sitting on the bench since Easter! Top it off with your favourite caramel sauce. I made a Baileys caramel and you can find the recipe here.

Cheesecake Easter Eggs with Baileys Caramel

Ingredients
  

  • 1 large hollow easter egg
  • 80g butternut snap cookies
  • 1 tbsp melted butter
  • 100g soft cream cheese
  • 80g mascarpone
  • 2 tbsp icing sugar
  • 100g dolloping cream or whip some thickened cream
  • 6 mini solid chocolate eggs
  • Baileys caramel or caramel sauce of your choice
  • 8 mini solid cholocate eggs to decorate

Instructions
 

  • Carefully pull appart the hollow egg along the seam. Use a knife dipped in hot water to cut along the seam.
  • Crush the butternut snap cookies in a plastic bag with a rolling pin, or in a food processor, until they resemble fine crumbs. Place in a small bowl and stir in the melted butter. Spoon this mixture into each of the hollow egg halves and carefully push down with the back of the spoon to form a base.
  • In a medium sized bowl, place the cream cheese, marscapone and icing sugar. Mix with a wooden spoon until well combined. Add the cream and gently stir through.
  • Melt 6 of the solid eggs in the microwave on half power. Make sure to only do short bursts of time and stir between each burst, or the chocolate will burn. Pour the melted chocolate into the cream cheese mixture and swirl a spoon through a few times to create a marbled effect. Don't overmix.
  • Spoon the cream cheese mixture into each of the half eggs, on top of the crumb base. Level off the tops of the mixture with a knife. Place both halves in the fridge to set for 2hrs.
  • Roughly chop the remaining solid eggs and scatter them over each cheesecake. Drizzle with some of your favourite caramel sauce. I love using Baileys Caramel Sauce – see the notes below for the recipe link!
